Pesto
So quick and simple to make – this pesto is delicious with pasta, or diluted in olive oil as a dressing. You could also spread it thinly on bruschetta, pizza bases, or garlic bread, or just add to Italian-style sauces for extra flavour.
Adjust the quantities to suit your tastes and the dish you are creating. For a dressing you will need very little, perhaps half a teaspoon per tablespoon of oil.
This one was made using home-grown basil. It’s really worth having growing herbs as they are super-tasty when picked straight from the plant!
- 50g basil
- 2 tbsp pine nuts
- 20ml olive oil
- 1 tbsp parmesan cheese
- 1 clove garlic
- Salt and pepper to taste
- Place all ingredients into a food processor and blend until smooth.
