Pizza

There’s nothing worse than nasty, soggy, takeaway pizza, except maybe the ones you get from the supermarket. Making your own is quick and easy, and really satisfying.

You can use this pizza dough recipe. Note that this is enough for 6 pizzas, but the ingredients below are only for two.

For the sauce, tinned tomatoes are perfect, and probably better than fresh. It’s worth cooking the sauce slowly and reducing it really well for a deeper taste, but if you really don’t have time, it’s not essential.

The great thing about making your own pizza is you can choose any toppings, so substitute those below for whatever you prefer. I used artichoke pieces in oil – the type you get in any deli or supermarket, and very thin Italian ham.

  • Makes 2 large thin crust pizzas
  • Pizza dough (use 1/3 of the quantity)
  • For the tomato sauce
  • 400g chopped tomatoes
  • 1 small onion, finely chopped
  • 1 large clove garlic, finely chopped
  • 2 tbsp olive oil
  • 1 tbsp dried mixed herbs
  • 1 tbsp tomato puree
  • Salt and pepper to taste
  • For the topping
  • 100g mozzarella
  • 100g parmesan
  • 3 pieces artichoke
  • 3 large slices Italian ham
  • 20 soft black olives
  • 30g capers
  • 1/2 large green chilli pepper
  • 2 eggs
  • Olive oil for drizzling
  1. Heat the oil in a pan.
  2. Add onions and garlic and heat gently until soft.
  3. Add chopped tomatoes, tomato puree, herbs and salt and pepper.
  4. Mix well and simmer over a low heat until well reduced.
  5. Heat an oven to 200 degrees.
  6. Divide pizza dough into two portions.
  7. On a floured surface, roll out to preferred thickness.
  8. Spread tomato sauce thinly over each base, leaving a 2cm gap to the edge.
  9. Add toppings and drizzle with olive oil.
  10. Bake for 10 – 15 minutes, or until crispy.
