Scotch pancakes / drop scones
Perfect for a lazy weekend breakfast – you can prepare and cook these pancakes in minutes. Note – my picture shows half the quantity used in the recipe below.
- Serves 4 (or 2 greedy people)
- 225g self-raising flour
- 300ml milk
- 1/2 egg, beaten
- Pinch of salt
- Butter to serve
- Honey to serve
- Sift flour into a mixing bowl.
- Make a well in the centre and add half the milk and the egg. Mix well.
- Add the rest of the milk and form a thick, smooth paste.
- Leave the mixture to rest for 10 minutes.
- Lightly grease and heat a heavy pan.
- Add 3 or 4 spoonfuls of mixture to the pan. Cook for about a minute – when the mixture starts to rise slightly, and form small bubbles it’s ready to turn.
- Cook on other side until golden. When done place on a plate under a sheet of foil to keep warm.
- When all pancakes are cooked, return to the pan and add butter making sure all pancakes are covered.
- Serve and cover pancakes with honey.
